A craving for comfort food

Last night I was itching for some comfort food.  I thought to myself what should I make and then I thought of my mom's meat loaf.  Unfortunately, after searching the house I realized my mom's recipe was back in Illinois.  So a call to mom in Michigan and off to cooking.  This is such an easy recipe.  My mom has been making this as long as I can remember.  It is so good.  Or at least we all think so :) With a baked potatoe and a salad it hit the spot.  Enjoy!

1 1/2 lbs ground beef (I use ground turkey)

3/4 c Quacker oats (quick one minute kind)

1t salt

1/4 t pepper

1/4 c chopped onion

1 egg well beaten

1/4 c milk

1T worcestershire sauce

1/2 t accent seasoning

2 T ketcup

2 T margarine melted

Mix all above ingredients together


Topping

1/3 C ketcup

1T mustard

Mix together add to top

Bake at 350 for 1 hour

Breakfast for the guys


This morning I was up early making breakfast for my husband's office.  Each day the guys take turns bringing in breakfast.  My husband only has to do it once every 2 weeks so not too bad.  Most of them just buy something, but today my husband wanted to do something different, so he asked me to make one of his favorite breakfast casseroles.  Now we don't make this very often because as you can see it's not exactly diet food, but it's perfect if you are going to have company and it's easy to prepare. 

 Here is the recipe.

Sausage, egg and hash brown casserole

1 1b. sausage  (I like to use Bob Evans original recipe sausage in the tube. Also the recipe doesn't call for it, but I cook my sausage before putting it in the dish)

9 lg. eggs, slightly beaten

3/4 c milk

1/4 c. melted butter

24 oz. pkg. hash browns

8 oz. shredded cheddar cheese

Preheat oven to 350 degrees. Layer sausage on bottom of well greased 9" x 13" pan.  Add milk and butter to beaten eggs and pour over sausage. Add hash browns and top with shredded cheese.  Bake 1 hour.

Recipes FYI




Just wanted to share with you that if you sign up for emails from Better Homes and Gardens they email you some great little recipes, decorating tips, home improvement ideas etc. Sometimes when I am tired of the same old recipes, there comes the BHG email with some new ideas. And they go along with the season. Todays email was Spring chicken recipes but they change for the holidays too.

Summer Pasta Salad Recipe

Summer Pasta Salad Recipe

16 oz. box of pasta (I used whole wheat rotini)
1/2 lb bacon cooked and crumbled
1/4 cup green onions, thinly sliced
1 pint cherry tomatoes, halved
4 oz. package crumbled feta cheese
1/2-3/4 lb baby arugula  (I used one package of baby spinach)
1/2 cup extra virgin olive oil
1/4 cup balsamic vinegar
1 tsp. grated lemon rind
1 tsp. dijon mustard
Salt and pepper to taste
1 cup cooked or grilled chicken pieces, optional

Directions:

Cook pasta according to package directions. Drain well. Transfer pasta to bowl.  Add bacon, sliced green onions, cherry tomatoes and arugula to warm pasta. Add feta cheese and toss.  Whisk together balsamic vinegar, lemon rind and mustard in small bowl; gradually add olive oil in a slow, steady stream, whisking until blended.  Wish in salt and pepper to taste. Toss vinaigrette.

This is a new recipe I made  for the hubs and I last evening.  I made a few changes to mine.  I used baby spinach because the store was out of arugula, I left the chicken out because it was late and didn't feel like cooking up chicken, and lastly I didn't use all the dressing.  I just tossed it with just a little of the dressing just because my husband doesn't like a lot of dressing but even with my changes it was really good.  I wish I would have taken a picture because it makes a nice looking salad.   This was another one the hubs really liked and said "save this recipe"
